Why it lands

Tipping policy varies enormously and is invisible to customers. In some places card tips are distributed fairly; in others they are pooled with management taking a share, or used to top wages up to the legal minimum rather than being additional. Cash handed directly removes every intermediary. It is the same money to you and a materially different amount to them.

Hand it to the person rather than leaving it on the table, where it may go into a pot. If you are unsure of the policy, ask — staff will tell you honestly. Keep some cash for the places you use regularly.
